Chocolate Zucchini Muffins

Chocolate Zucchini Muffins

2 tbsp butter or margarine
¾ cup sugar
¼ cup canola oil
1 egg
1 tsp vanilla
¼ cup buttermilk
1 ¼ cups white flour or 1 cups whole wheat flour - sifted
¼ tsp baking powder
½ tsp baking soda
¼ cup cocoa
½ tsp cinnamon
½ tsp ground cloves
½ tsp salt
1 cup zucchini – grated
½ cup chocolate chips

1)   Preheat oven to 325 F, set the oven racks to the center and line a muffin tin with cupcake liners.
2)   To a large bowl add the dry ingredients – flour, baking powder, baking soda, cocoa, cinnamon, cloves and salt.  Mix.
3)   To the bowl for the mixer add butter and sugar, cream until smooth.  Add oil, eggs, vanilla and buttermilk, mix until smooth.  Add dry ingredients; mix only until the flour is wet.
4)   Fold in zucchini and chocolate chips.
5)   Bake in for 30 minutes.

What Went Well?
Some things than did go well are that you all took turn getting the ingredients and adding and mixing them. We used great teamwork. I think our batter came out pretty good it smelled delightful. The muffins came out beautifully in the end and tasted delicious.
What Didn’t Go Well?
Things that didn’t go so well was that when we took the muffins out we didn’t let them sit. So some of us ended up burning ourselves in the process. Another thing was that when we took a bit long to bake our muffin, so we ended up staying a bit late after school…again. Oh well it was definitely worth it!
What Would You Do Differently?
Some things that I would of done differently was to maybe a bit more batter or distribute the batter more evenly throughout the pan because out muffins weren’t all the same size and some we lopsided.
 What Did You Learn?
I learned that when you make muffins you can make them with zucchini. When I first heard what we were making I didn’t really think it would taste than great but in the end they were so amzing!
